Meet Our Chef, Trevor Payne
Trevor’s culinary influences began with his mom, a self-taught cook and, owner of a café in Asheville, North Carolina. “My parents were my earliest supporters,” he says. One day his father found a used copy of The French Laundry Cookbook and brought it home. “Cliché as it was, that was my first real cookbook. For the first time, I realized there was more to cooking than steaks and pizza at chain restaurants.” Payne studied at the Oregon Culinary Institute and graduated in 2008. While in school he worked full time at Clyde Common and interned at Le Pigeon. Payne’s culinary training and passion range from French and European influences to more internationally-inspired dishes.
